Creamy Maple Cranberry Oatmeal

Ingredients
1-1/2 gallons skim or lowfat milk
1-1/2 tsp. salt, optional
1, 42 oz. container Quaker® Oats (quick or old fashioned,
uncooked)
1 quart dried cranberries
2-1/2 cups maple-flavored syrup, regular or light
2 cups toasted wheat germ
maple-flavored syrup, regular or light, As needed
milk or yogurt, As needed
Directions
- In heavy saucepan, combine ingredients. Scald milk, watch carefully*. Stir occasionally.
- Stir in oats. Simmer 1 minute for quick oats. Simmer 3-5 minutes for old fashioned oats. Remove from heat.
- Stir in cranberries and maple syrup.
- Transfer mixture to steamtable; cover. Let stand 5-10 minutes.
- Stir in wheat germ thoroughly.
- Serve with additional syrup, milk or yogurt, if desired.
Chef's Tips
- Milk will overflow if left unattended and heated beyond a simmer.
- To prevent milk from sticking to bottom while heating, spray saucepan with fat free no-stick cooking spray, before adding milk.
- Cranberries may be served as topping.
- Honey may be substituted for maple-flavored syrup.
- Whipped cream may be substituted for milk or yogurt.
